I made a salad for a potluck this week totally plant-based. It’s a take on coleslaw and came from Forks Over Knives. The ingredients include shredded cabbage and carrots, quinoa, dried cranberries, green onion, and an oil free dressing made with tofu, vinegar and spices. Tastes different than traditional coleslaw but was good!

Last Friday I posted this pic and asked what you thought it was. There were some responses on social media so I thank you for those! Now for the answer! It is a pomelo, an Asian citrus fruit related to the grapefruit. It is large, has a thick rind, and tastes like a sweet grapefruit.
